This is my 2nd year of growing a garden. I am still surprised that I enjoy sitting in the sun and caring for plants. Perhaps it's because they are easier to care for than children! The first year I planted 9 tomato plants. Holy tomatoes batman! Nine plants grows a lot of fruit. So this year I downsized to 6 plants. Huh. I didn't notice much of a difference, I still had 1,000,002 tomatoes to take care of.
My daughter's fiance's mother posted a recipe for Roasted Tomato Soup from Zupa's on Facebook. I gave it a try and I love it! I've shared it with other tomato growers and this recipe has been adopted by many.
My favorite part of the recipe is that I don't have to peel or remove the seeds. Hallelujah! It says to strain the tomatoes through a sieve, but I don't find that necessary. I like to add rice to my soup. Delicious!
My friend told me I could roast the tomatoes and then freeze them for this soup. I tried it and it works great! Just roast the tomatoes with the garlic and then seal them in ziploc bags and freeze. I will be able to enjoy this soup all winter!
