Easy And Yet Labor Intensive Dinner

My menu had quite easy recipes to prepare.  I enjoy simple.  And yet it was so labor intensive!  I don't enjoy labor.  The problem was each recipe required a lot of chopping.  My poor cutting board!

The main dish was Crockpot chicken Taquitos.  Thankfully the chopping was done with my food processor.  But it took a lot of time to roll 24 taquitos and fry them.  My entire family loved these.  Score!  I want to make them again but I hope to figure a way to bake them instead of frying the little rolls of deliciousness.

One must have guacamole with Taquitos.  I've recently began making Pioneer Woman's guacamole and it is my favorite thing ever!  Okay, it's my favorite thing with avocados.  As for the chopping we have six avocados, onion, tomatoes, jalapeno, garlic, and cilantro. Choppity chop chop!

I hadn't satisfied my chopping urge so I thought a fruit salad would be the solution.  Apples, bananas, oranges, and strawberries.  That's a lot of chopping!

I need to sharpen my knives.
