The girls at Nannygoat are hosting a recipe swap today. When we moved to Texas I was introduced to Pico de Gallo. I had missed out on this goodness for years! Fajitas will never be eaten again without Pico de Gallo in my household!
Pico De Gallo
3 yellow onions, red onions, or both
3 small avocados (I sprinkle these with lemon juice to keep them from browning)
3 - 6 jalapenos
3 stems fress cilantro, chopped finely
Dice onion, jalapenos, and cilantro, avocados, and tomatoes in small pieces. (I chope the first 3 ingredients in the food processor) Mix together and refrigerate a few hours to let the flavors blend.
I used the Nannygoat's recipe for Cafe Sweet Rio and topped it with the Pico de Gallo served on tortillas. It was declicious!
