Unfortunately, two of my four children have been found to have high cholesterol. The other two haven't been tested yet. I feel like a failure as a mother when I say this. I decided to get myself tested because many of my immediate family also has high cholesterol. Luckily for me, my test came back normal. I do make a lot of effort trying to feed my family well. We rarely eat out, and I never fry the food we eat at home. (Except for the occasional Laura's things) But I am reevaluating what we eat and how I can make it better.
This week I am trying something new. My recipes for this week's dinners will be from "The Sneaky Chef." It's about hiding vegetables in food so your children will never know what they ate. I'm not above deceiving my children! In fact, I find great amusement in it! Try it, you'll like it!
So, this week I am serving:
IQ Tuna Patties (with white beans, and wheat germ)
Pigs In Healthy Blankets (wheat germ, wheat flour, carrots, and sweet potato)
Crunchy chicken Tenders (wheat germ, wheat flour, carrots, sweet potato, almonds)
Maxed Out Meatballs with my sweet & sour sauce (spinach, broccoli, peas, wheat germ)
For snacks I will also be making Cheesy Animal Crackers (almonds, wheat four, wheat germ, chickpeas) and Unbelievable Chocolate Chip Cookies (almonds, white beans, oats, wheat four, and wheat germ).
I'll let you know how these turn out and if my kids can taste the hidden vegetables. Hopefully it'll turn out better than my Hibilly Chili!
