I Have Redeemed Myself

After the Rachael Ray flop I needed to renew my faith in my dinner making abilities.  So I present to you (pretend you hear a drum roll) FOIL-PACK TACO CHICKEN DINNER!!!  I found this as I was floating around blog land.  Unfortunatley, I can't remember what blog.  So, if this is your recipe please let me know and I will give you credit because it was delish!

Foil-Pack Taco Chicken Dinner
4 boneless skinless chicken breasts
4 tsp. taco seasoning mix
2 cups thinly sliced potatoes (make them thin or your chicken will finish before your potatoes)
1 cup shredded cheese
1/2 cup salsa
1/4 cup sour cream
1. Preheat oven to 400 degrees.  Sprinkle chicken evenly with seasoning mix.  Place 1/2 cup of the potatoes on center of each of 4 large sheets of heavy-duty foil; top each with 1 chicken breast, 1/4 cup of the cheese and 2 Tbsp. of the salsa.
2. Bring up foil sides.  Double fold top and both ends to seal each packet, leaving room for heat circulation inside.  Place in single layer in 15x10x1-inch baking pan.
3. Bake 30 to 35 min. or until chicken is cooked through and potatoes are tender.  Remove packets from oven.  Let stand 5 min.  Place one packet on each of four dinner plates.  Cut slits in foil iwth sharp knife to release steam before opening.  (unless you're me and you rip that sucker open burning your fingers on the tinfoil and scalding your face with the steam) Top each serving with 1 Tbsp. of the sour cream.
Yummy!

I was checking out my blog stats and saw several links for my site from here.  I'm not sure what this is about.  It looks like people are rating your blog or website.  It asks what the likely audience would be.  I'm so afraid people will check the box for the 65 or older group because that's just how boring and dull I am.

That sounds delish! I'll have to try it. Thanks! (oh, and if I sounded like a total jerk when I was talking about RR...forgive me...I get so passionate sometimes)

People can just put your blog on their site and other people can rate it? Hmm.
